- 250 gr. salchicha parrillera

- Para empezar... picamos los pimientos, la cebolla, los ajos, el tomate todo en cubos medianos. Cortamos medio morrón rojo en cintas finas y reservamos para decorar... tomamos el cazón y la caña de lomo los picamos también en cubos.
- Agarramos una paellera de tamaño mediano la ponemos a fuego medio y agregamos el aceite.
- Ya una vez que este caliente el aceite agregamos las alitas de pollo, cazón y el cerdo la chistorra y la salchicha todo picado, dejamos precocer unos 10 min.
- Luego agregamos las verduras tanto la cebolla,morrón,ajo y tomates picados.
- Después agregamos los chícharos, ejotes, almejas y mejillones y agregamos 2 cucharones de caldo de pollo caliente... dejamos cocer por unos 15 min. mas y agregamos la mitad del azafrán.

- Pasando los 15 min. Agregamos los dos kg de arroz y vertemos el resto del azafrán. Mezclamos bien todo y vamos agregando caldo de pollo poco a poco.
