  1. Sal pimentar y cortar las pechugas de pollo en cuadritos pequeños.
  2. Calentar sartén pequeña a fuego alto y añadirle aceite vegetal y mantequilla.
  3. Echar los trocitos de pechuga y sellar a fuego alto por 4 min. Hay que menearlos de lado a lado para que sellen bien por todos lados. Bajar fuego a mediano, añadir 1 oz de agua para sacar el sabor que quedo en el sartén.
  4. A fuego mediano en sartén grande calentar y poner mantequilla en spray, (puede ser mantequilla regular). Dorar plantilla por un lado. Virar y poner el queso rallado y sobre el queso ponemos el pollo. Cerramos la plantilla y terminamos de dorar.
  5. Retiramos del sartén y cortamos por la mitad y luego por la mitad otra vez. Quedarán 4 triángulos.
  6. Para el plateo, colocamos los triángulos en linea uno sobre la mitad del otro.
  7. En cada lado colocamos una 1 cda de guacamole, 1 cda de pico de gallo, 1 cda sour cream.
  8. El Barbi mayo, es una mezcla en partes iguales de salsa BBQ y mayonesa. Puede ponerla en una botella de punta fina y hacer lineas diagonales sobre todas la plantilla.
